Wierd, last night I noticed that when my truck was cold and I accelerated the lights seemed to dim just a tad then get brighter after I let off the gas, has only done this a few times just when it was cold. I have had something like this happen with gas powered cars etc. and it was usally the alternator, anyone else notice something like this?

The accelerating part is a little weird but your grid heater pulls a lot of amerage and you should be able to see the lights dim, the volt guage pull down, and even the motor pull down a few RPM's from the heavy alt. load when that grid kicks on and off. I've noticed the light diming at idle, but never when moving.

My truck takes a few minutes to come up to full voltage... If you start it when it's cold outside, the voltage gauge says about 12 volts and the lights will be dime but go bright for a split second then go dim, etc. Then 60 seconds later the voltage gauge goes straight up to 14 and I'm good to go. I figured it was the heater.

Exactly what he said. Intake grid requires big amps.
